Cajun Jambalaya
Ingredients
3 tablespoons
safflower oil
1 pound
chicken thighs
to taste
kosher salt
0.75 pound
Andouille sausage
2 cups
onion, chopped
1 cup
celery, chopped
1 cup
green bell pepper, chopped
2 tablespoons
garlic, sliced
2 cups
long-grain rice
1
bay leaf
1 teaspoon
paprika
0.5 teaspoon
cayenne pepper
0.5 teaspoon
dried oregano
0.25 teaspoon
dried thyme
4 cups
chicken broth
Instructions
STEP 1
Heat 2 tablespoons oil in skillet; cook chicken until browned for 8 minutes. Remove and set aside.
STEP 2
Add sausage to the skillet; cook until browned, about 2 minutes. Remove and set aside with chicken.
STEP 3
Add remaining tablespoon oil, onion, celery, bell pepper, garlic, and 1 teaspoon salt; cook until soft and golden, about 8 minutes.
STEP 4
Add rice; cook, stirring constantly, for 1 minute.
STEP 5
Add bay leaf, paprika, cayenne, oregano, and thyme; continue to stir for 1 minute.
STEP 6
Return chicken and sausage back to skillet with any accumulated juices.
STEP 7
Stir in chicken broth; increase heat to bring to a boil.
STEP 8
Reduce heat to a simmer, cover, and cook until rice is tender, about 20 minutes. Serve.
