Brown Sugar Oatmeal Cookies
Ingredients
2 cups
packed dark brown sugar
1 cup
salted butter, softened
2 teaspoons
vanilla extract
2
eggs
1 1/2 cups
all-purpose flour
1 teaspoon
salt
1/2 teaspoon
baking soda
3 cups
old-fashioned oats
Instructions
STEP 1
Preheat the oven to 350 degrees F.
STEP 2
In an electric mixer, beat together brown sugar and butter until fluffy. Add vanilla and eggs one at a time, scraping the bowl after each addition.
STEP 3
Mix flour, salt, and baking soda in a bowl. Combine into the creamed mixture in 2-3 batches, mixing until just combined. Add oats until just mixed.
STEP 4
Use a cookie scoop to drop dough onto baking sheets, spacing them apart. Bake 12-13 minutes until dark and chewy, adding time for crispier cookies.
STEP 5
Let cool on baking sheets before transferring to a plate.
