Milk or heavy cream

Sausage crumbles
1/4 cup
Sliced green onion
2 cups
Shredded cheese (such as cheddar)
Instructions
STEP 1
Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish with cooking spray and set aside.,
STEP 2
In a skillet on the stove, heat up a splash of avocado oil over medium-high heat and saute mushrooms, sweet potato, yellow onion and green peppers until slightly soft, approximately 5 minutes. Season with salt and pepper.,
STEP 3
In the greased 9x13-inch baking dish, whisk eggs and milk or cream together. Season with salt and pepper.,
STEP 4
Add pre-cooked sausage crumbles and green onion to baking dish.,
STEP 5
Add cooked veggies to baking dish.,
STEP 6
Bake the casserole uncovered for 30 minutes and add cheese to the top for the last 5 minutes. Check the center with a toothpick to make sure it’s cooked all the way through. If the toothpick comes out clean, it’s ready to eat.
