Breakfast Casserole

Cooking spray
1 splash
Avocado oil
to taste
Salt
to taste
Pepper
1/2 cup
Sliced mushrooms
1/4 cup
Diced yellow onion
1/2 cup
Diced green peppers
1 cup
Chopped sweet potato

Eggs, lightly beaten
2/3 cup
Milk or heavy cream
1 cup
Sausage crumbles
1/4 cup
Sliced green onion
2 cups
Shredded cheese (such as cheddar)
Instructions

In a skillet on the stove, heat up a splash of avocado oil over medium-high heat and saute mushrooms, sweet potato, yellow onion and green peppers until slightly soft, approximately 5 minutes. Season with salt and pepper.

In the greased 9x13-inch baking dish, whisk eggs and milk or cream together. Season with salt and pepper.

Add pre-cooked sausage crumbles and green onion to baking dish.

Add cooked veggies to baking dish.

Bake the casserole uncovered for 30 minutes and add cheese to the top for the last 5 minutes. Check the center with a toothpick to make sure it’s cooked all the way through. If the toothpick comes out clean, it’s ready to eat.
