Instructions

Prepare the chiles: Char poblano chiles over an open flame, cover to steam, then peel, stem, and chop.

Toast guajillo chiles in a skillet for 15 seconds, then soak in hot water until softened.

Season meat with salt. Sear in a large pot with oil until browned, then transfer to a bowl.

Cook onion in the pot until golden, then return meat to the pot.

Blend tomatoes, vinegar, garlic, ginger, oregano, sesame seeds, cumin, cloves, and black pepper with the poblanos and guajillos.

Pour blended mixture over the meat, add cinnamon and bay leaves, then cover with water.

Cover and cook in the oven until tender, about 2 hours.

Serve in bowls, topped with cilantro and lime, with warm tortillas on the side.
