Instructions
STEP 1
Boil wine, vinegar, and shallot in a saucepan until reduced.
STEP 2
Add cream, salt, and white pepper; boil for 1 minute.
STEP 3
Reduce heat and whisk in butter pieces until smooth.
STEP 4
Strain sauce through a sieve to remove shallots.
