Beet Goat Cheese Salad

Instructions

Bake the beets in the oven for 1 to 1.5 hours, until tender.

While the beets are baking, prepare the dressing by whisking together balsamic vinegar, shallots, Dijon mustard, olive oil, salt, and pepper in a bowl.

Once the beets are done, let them cool, then peel and slice them.

Arrange the sliced beets on a serving platter and drizzle with the dressing just before serving.
