Banana Bread

mashed ripe bananas

canola oil
1/4 cup plus 1 tablespoon
buttermilk
1 teaspoon
vanilla extract
1 cup
chopped walnuts, optional
Instructions
STEP 1
Preheat the oven to 350°F.
STEP 2
In a large bowl, whisk flour, sugar, baking soda, and salt.
STEP 3
In another bowl, whisk eggs, mashed bananas, oil, buttermilk, and vanilla until combined.
STEP 4
Add banana mixture to flour mixture; stir until just combined. Fold in walnuts if desired.
STEP 5
Pour batter into a greased 9x5-inch loaf pan.
STEP 6
Bake until a toothpick comes out clean, about 1-1¼ hours. Cool for 15 minutes in the pan, then onto a wire rack.
