Balsamic-Roasted Pumpkin with Goat Cheese

sugar pumpkin
1/4 cup
balsamic vinegar
2 tablespoons
maple syrup
2 tablespoons
olive oil
1 teaspoon
garlic powder
1 teaspoon
onion powder
1/2 teaspoon
kosher salt
1/4 teaspoon
black pepper
2 ounces
goat cheese
1 tablespoon
fresh oregano
Instructions
STEP 1
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
STEP 2
Cut the pumpkin top and bottom off, peel, and scoop seeds and strings. Cut into 1/2-inch cubes.
STEP 3
Mix vinegar, syrup, oil, garlic powder, onion powder, salt, and pepper in a bowl. Pour over pumpkin and toss.
STEP 4
Bake for 20 minutes. Stir and continue baking until softened and caramelized, 25 to 30 more minutes. Serve with goat cheese and oregano.
