Baked Salmon with Lemony Orzo and Basil-Bacon Peas
Ingredients
1 cup
orzo
2 teaspoons
garlic powder
5 large
basil leaves
2 teaspoons
sea salt
1 (1 1/2 pound)
skin-on, sockeye salmon
1/4 cup
butter
3 slices
bacon, chopped
1 (16 ounce)
package frozen peas
To taste
black pepper, freshly ground
2
lemons, juiced
Instructions
STEP 1
Preheat oven to 450 degrees F. Line a pan with foil.
STEP 2
Boil salted water in a large pot. Cook orzo for 10 minutes, then drain.
STEP 3
In a bowl, mix garlic powder, 4 basil leaves, and 1/2 teaspoon salt.
STEP 4
Place salmon skin-side down on the pan. Brush with 1 tablespoon melted butter and sprinkle garlic-basil mixture on top.
STEP 5
Bake salmon until flakes easily, about 8 minutes. Let rest.
STEP 6
Cook bacon in a skillet over medium-low heat until crispy, about 4 minutes. Add 1/2 teaspoon salt and peas; season with pepper. Heat through for about 3-4 minutes.
STEP 7
In a bowl, whisk together remaining 3 tablespoons melted butter, juice from 1 lemon, and 1 teaspoon salt. Pour over cooked orzo and toss.
STEP 8
Divide orzo among plates, top with salmon, and serve with peas on the side. Garnish with remaining basil and lemon juice.
