Preheat the oven to 425°F and pat the salmon dry. If desired, cut the fillet crosswise into 8 pieces. Place the salmon in a greased 13x9-inch baking dish and brush evenly with melted butter.

In a bowl, stir together the white wine (or chicken broth), lemon juice, pepper, and dried tarragon. Pour the mixture over the salmon.

Bake uncovered for 15 to 20 minutes until the fish is flaky. Use a meat thermometer to ensure the center reaches at least 145°F.
