Bacon Potato Pancakes

Instructions
STEP 1
Cook bacon in skillet until crisp, about 3 to 5 minutes. Transfer to paper towel, cool, and crumble. Reserve drippings in skillet.
STEP 2
Mix crumbled bacon, potatoes, flour, eggs, garlic, thyme, salt, and pepper in a large bowl.
STEP 3
Pour oil into skillet with drippings; heat over medium until shimmering.
STEP 4
Drop heaping tablespoonfuls of mixture into hot oil; flatten to small patties. Cook until browned, about 3 minutes per side.
