Authentic Chicken Adobo
Ingredients
2 cups
coconut vinegar
1/2 cup
soy sauce
1 head
garlic, chopped
10
bay leaves
1 tablespoon
garlic powder
1 1/2 teaspoons
ground black pepper
1 1/2 teaspoons
annatto powder
5 1/2 pounds
cut-up chicken parts
3 tablespoons
vegetable oil, divided
Instructions
STEP 1
Combine vinegar, soy sauce, and half the garlic.
STEP 2
Add bay leaves, garlic powder, black pepper, and annatto powder.
STEP 3
Stir in the chicken; marinate and refrigerate for at least 4 hours.
STEP 4
Remove chicken from marinade; pat dry and reserve marinade.
STEP 5
Heat 2 tablespoons oil in a skillet; cook chicken until browned, about 4 minutes per side.
STEP 6
In another skillet, heat remaining tablespoon oil; cook remaining garlic until golden.
STEP 7
Stir in remaining annatto powder; simmer for 3 minutes.
STEP 8
Pour the garlic mixture over the chicken; add reserved marinade.
STEP 9
Bring to a simmer; cover and cook until chicken is tender, about 45 minutes.
STEP 10
Uncover and cook until sauce reduces slightly, about 10 minutes.
