Arugula Salad

Ingredients
4 bunches
fresh arugula
1/2 tsp
Dijon mustard
1/8 cup
champagne vinegar
1/2 tsp
sugar
1/4 cup
walnut oil
1/4 cup
vegetable oil
2 Tbl
olive oil
1 ripe pear

1/4 cup
toasted walnuts
1/2 cup
Stilton cheese
Instructions
STEP 1
Pick over the arugula and discard any tough stems. Wash and spin dry.
STEP 2
Whisk together the mustard, vinegar and sugar in a small bowl.
STEP 3
Very slowly drizzle the oils into the bowl, whisking continually to emulsify the dressing. Season to taste with salt and pepper.
STEP 4
Place the arugula in a bowl and toss with the dressing. If you are serving individual salads, divide the greens between 4 chilled plates.
STEP 5
Sprinkle some of the diced pear, walnuts and Stilton atop each of the 4 servings.
