Anadama Bread
Ingredients
1 cup
cornmeal, plus extra for dusting
2 cups
warm water
1/2 cup
molasses
5 tablespoons
unsalted butter, melted
5 1/2 cups
all-purpose flour
1 tablespoon
instant or rapid-rise yeast
2 1/2 teaspoons
salt
Instructions
STEP 1
Grease large bowl. Grease two loaf pans and dust with cornmeal.
STEP 2
Whisk water, molasses, and melted butter until combined.
STEP 3
Using stand mixer with dough hook, mix flour, yeast, salt, and cornmeal on low speed.
STEP 4
Slowly add molasses mixture and knead until cohesive mass forms, then increase speed and knead until smooth, about 6 to 8 minutes.
STEP 5
Transfer dough to a greased bowl and cover. Let rise at room temperature until doubled in size, about 1 to 1.5 hours.
STEP 6
Deflate the dough and divide in half. Shape each half into a loaf and place in prepared pans.
STEP 7
Cover loaves loosely and let rise until doubled again, about 1 to 1.5 hours.
STEP 8
Preheat oven to 425 degrees. Bake loaves for 35 to 45 minutes until crust is brown and bread registers 200 degrees.
STEP 9
Let cool completely before serving, about 2 hours.
