Instructions
STEP 1
Preheat oven to 350°F. Line muffin tin.
STEP 2
Whisk almond flour, baking soda, and salt.
STEP 3
Add coconut oil, maple syrup, eggs, lemon zest, and vanilla. Mix well.
STEP 4
Fold in blueberries and spoon into muffin cups.
STEP 5
Bake 18-20 minutes until tops spring back. Cool for 5 minutes.
