Instructions

Place chicken, bay leaves, salt, and pepper in a stockpot with water. Bring to a boil.

Reduce heat and simmer until chicken is no longer pink, about 2 hours.

Remove chicken to cool. Discard skin and bones; shred meat.

Break up canned tomatoes into a casserole dish.

Add shredded chicken and other ingredients back to the pot. Cook until vegetables are tender, about 1 hour.
