15-Minute Courgette Pasta

Instructions
STEP 1
Cook the pasta according to package instructions until al dente.,
STEP 2
While the pasta is cooking, heat olive oil in a pan over medium heat.,
STEP 3
Add chopped courgettes and cook for about 5 minutes until softened.,
STEP 4
Stir in minced garlic, chopped chilli, and lemon zest, cooking for another 2 minutes.,
STEP 5
Drain the pasta and add it to the pan with the courgette mixture.,
STEP 6
Squeeze in lemon juice and toss everything together.,
STEP 7
Serve with fresh mint and a sprinkle of salt.
