Instructions

Cook until beef is browned, about 5 to 7 minutes. Simmer until pan juices evaporate, about 10 more minutes.

Add tomatoes, tomato paste, sugar, salt, bay leaf, oregano, thyme, pepper, and garlic salt; boil.

Reduce heat and simmer until flavors blend, about 30 minutes.

Preheat oven to 350°F (175°C).

Boil salted water, add manicotti and cook until tender, about 8 minutes. Drain and cool slightly.

In a bowl, combine cottage cheese, mozzarella, 1/4 cup Parmesan, egg, salt, and pepper.

Spoon cheese filling into each manicotti shell.

Pour some sauce into a 9x13-inch dish. Arrange manicotti; cover with remaining sauce and foil.

Bake until bubbly, about 30 minutes. Sprinkle remaining Parmesan on top, and bake until melted, 10 to 15 more minutes.
