Simple Harissa Aubergine Crêpes

Aubergine

Instructions

Slice the aubergine into rounds and place them on a baking tray.

Drizzle with olive oil and sprinkle with salt, then roast in the oven for 25-30 minutes until golden and soft.

In a bowl, mix the flour, almond milk, and a pinch of salt to create a smooth batter.

Heat a non-stick frying pan over medium heat and add a little oil.

Pour in a ladle of the batter and swirl to cover the base of the pan.

Cook for 2-3 minutes until the edges lift, then flip and cook for another minute.

Repeat with the remaining batter, stacking the crêpes on a plate as you go.

Serve the crêpes topped with the roasted aubergine and a dollop of spiced harissa hummus.
