Sautéed Zucchini and Mushrooms

Ingredients

olive oil
3 tbsps
butter
2 small
zucchinis
Salt and pepper
1 small
yellow onion
1 lb
small button mushrooms
3 to 4 cloves
garlic
2 tsps
fresh chopped herbs
1/4 c
vegetable broth
Chopped fresh parsley
Grated parmesan
Instructions

Add the zucchini slices. Season with salt and pepper and sauté for 3-4 minutes until tender. Remove and set aside.

In the same skillet, melt the remaining butter, and add onions. Cook until softened.

Stir in the mushrooms and cook until browned.

Add garlic and herbs, cooking for 20 seconds before returning the zucchini to the skillet.

Stir in the vegetable broth and cook for 2 more minutes.

Garnish with parsley and parmesan and serve.
